Does a 30 day multiple entry visa last simply for 30 days from date of arrival in Vietnam regardless of whether you leave the country during those 30 days, or does it provide you with 30 actual days spent in Vietnam? As in, if I spend 7 days in Vietnam and then leave into a neighbouring country for a further 7 days, when I return to Vietnam will my visa have 23 days left, or only 16?

Be kindly noted that your visa starts from date of arrival and expires 30 day later. For example, you would like to enter Vietnam on June 30 and get visa for this date, your visa will be valid from June 30 to July 30.
In case, you have intention to return Vietnam, you should apply for multiple entry visa. However, you have to return and leave Vietnam before July 30.
