i recently paid for a single entry visa into Bietnam and due to us now visiting Cambodia have found out that we require a multiple entry one. Can I ammend the existing visa or do I need a new Visa?
If I apply for letter for 10 people, does each person receive there own individual letter for Vietnam visa approval?

Since the second time entering Vietnam just for transit and Vietnam does not require transit visa, so you just need to apply visa for your first arrival in Vietnam to stay in Hanoi for 5 days. And in this case, you just need to apply online for 1-month single entry visa to Vietnam, not 1-month multiple entry visa.

Does single entry mean one trip to Vietnam one way and multiple mean return
Yes,
Single entry visa to Vietnam means with that visa, you are allowed to enter Vietnam once only and then if you leave Vietnam, your Vietnam visa will automatically become invalid and you cannot come back Vietnam with that visa. But multiple entry visa to Vietnam means with that visa, you can enter and leave Vietnam as many times as you wish during your visa validity.
